Oreo Brownies

3/4 cupbutter
1 1/2 cupssugar, divided
3 tbspvegetable oil
2 tspvanilla extract
1egg yolk
3/4 cupall purpose flour
1/2 tspsalt
1/2 cupunsweetened cocoa powder
3/4 cupsemisweet chocolate chips
12oreo cookies, roughly chopped


  1. Preheat oven to 350 degrees (F) (175 degrees C). Line an 9x9-inch metal baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  2. In a medium saucepan, combine the butter and 1/2 cup (100 grams) sugar. Cook over medium heat, stirring frequently, until butter is completely melted.
  3. Remove From Heat. Stir in vanilla and oil
  4. In a large mixing bowl, combine the eggs, egg yolk, and remaining sugar. Whisk until well combined.
  5. Slowly add the warm butter mixture into the egg mixture, adding it very gradually (a little bit at a time) and whisking constantly, until completely combined.
  6. Add in the flour, salt, and cocoa powder and, using a rubber spatula, slowly stir until just combined.
  7. Fold in chocolate chips and oreo. Make sure to not overmix
  8. Scrape the batter into the prepared pan and smooth the top. Sprinkle the remaining Oreo cookies on top of the batter.
    Bake for 27 to 30 minutes, or until the edges are firm and

Can use vegetable, canola, or coconut oil
