InstantPot Bourbon Chicken
Ingredients
| 2 pounds | boneless, skinless chicken thighs or breasts |
| 1/2 cup | apple juice |
| 1/2 cup | Bourbon |
| 1/4 cup | soy sauce |
| 1/2 cup | brown sugar |
| scant 1/4 cup | ketchup |
| 2 Tbs | honey |
| 1/2 tsp | crushed red pepper flakes |
| 4 cloves | garlic, pressed |
| 1/2 tsp | ginger |
| 3 Tbs | cornstarch |
| 3 Tbs | water |
| 3 | green onions, sliced |
| |
Steps
- Add all ingredients except chicken, cornstarch, water and green onions to the pot. Whisk thoroughly and then add the chicken, stirring to coat the chicken.
- Put lid on pot and set to sealing. Pressure cook on high for 12 minutes for fresh chicken or 18 minutes for frozen.
- Combine cornstarch and water. Set aside.
- Allow pot to naturally release for 5 minutes and then vent for a quick release.
- Remove chicken from pot and dice into bite sized pieces.
- Turn pot to saute. When sauce is boiling, slowly add cornstarch and water mixture. Whisk until sauce thickens and return chicken to the pot.
- Serve over mashed potatoes and top with green onions.
Note
Recipe makes a lot of sauce. I use more chicken than the recipe calls for. Probably 3 pounds or more.
Really good on mashed sweet potatoes.
