Blueberry Glaze Pie

1 qtfresh blueberries, divided
3/4 cupwater
3/4 cupsugar
3 tbspcornstarch
3 tbspfresh orange juice
8 oz pkgcream cheese softened
9"graham cracker crust


  1. Combine 1 cup of blueberries and water in medium saucepan. Simmer for 3 to 4 minutes.
  2. Combine sugar and cornstarch in small bowl. Add sugar mixture to the blueberries in the saucepan.
  3. Cook mixture over medium heat, stirring constantly until syrup is clear and thickened.
  4. Add in 1 tbsp orange juice.
  5. In bowl, beat cream cheese with a mixer until fluffy. Stir in remaining 2 tbsp of orange juice.
  6. To assemble the pie, spread the cream cheese mixture onto the bottom of pie crust. Cover with remaining 3 cups of fresh blueberries. Top with blueberry syrup.
  7. Place covered in the fridge, and chill thoroughly before serving


Serve with vanilla ice cream or whipped cream
