Skillet Baked Spaghetti

1 lbgrd beef, turkey or italian sausage
2 clovesgarlic, minced
pinchred pepper flakes
1/2 tspdried oregano
1/2 tspdried basil
1/4 tspthyme
8 ozspaghetti noodles, broken to 2" pieces
28 oz cancrushed tomatoes
2 cupwater
1 1/2 tspsalt
1/2 tsppepper
3 ozlight cream cheese
1/2 cupshredded mozzarella
1/4 cupParmesan cheese


  1. In a large 12-inch nonstick skillet that is oven-safe, cook meat with the garlic and red pepper flakes over medium to medium-high heat, breaking the meat into small pieces, until the meat is cooked through, 5-6 minutes. Drain any excess grease, if needed.
  2. Stir in the oregano, basil, thyme, spaghetti, crushed tomatoes, water, salt and pepper. Stir carefully, skillet will be very full.
  3. Bring the mixture to a simmer over medium heat and cook, covered, stirring every once in a while to prevent sticking and break up the noodles, for 12-14 minutes, until the pasta is tender and most of the liquid has been absorbed.
  4. Preheat the broiler to high heat
  5. When pasta has cooked through, stir in the cubed cream cheese until it has melted and combined with the pasta. Sprinkle the mozzarella and Parmesan cheeses over the top
  6. Broil the pasta dish in preheated oven for 2-3 minutes until golden and bubbly
  7. Remove the skillet from the oven and let it sit for 5 or so minutes before serving.


Recipe scales up well. But make sure to use at a minimum 12" deep skillet for a double batch
