Meatball and Rice Skillet with Baby Peas

2 tbspolive oil
1 smallsweet onion, diced
3 clovesgarlic, minced
salt and pepper
1 1/2 cupJasmine rice
1/4 cupwhite wine
2 1/4 cuplow sodium chicken broth
16cooked Italian meatballs
3/4 cupbaby peas, thawed
1/4 cupflat leaf parsley, chopped


  1. Warm oil in a large skillet over medium high heat.
  2. Add onion, saute until soft and translucent, about 3 minutes. Add in garlic and saute for about 30 seconds. Season with a dash of salt and pepper.
  3. Stir in rice to coat. Add the wine, cook until rice has absorbed almost all of the liquid about 1 minute.
  4. Add broth, meatballs and peas, bring to a boil.
  5. cover and reduce heat ot low. Cook for 20-22 minutes until rice is tender. Toss in parsley.
  6. Serve immediately


Meatballs can be thawed or frozen.
