Requires overnight prep - mix ahead and refrigerate for 8-12 hrs
Ingredients
| 1 cup | steel cut oats |
| 3/4 cup | sliced almonds |
| 1 1/4 tsp | baking powder |
| 1 1/2 tsp | cinnamon |
| 1/8 tsp | nutmeg |
| 1/8 tsp | salt |
| 2 2/3 cup | almond milk |
| 1 tsp | vanilla |
| 2 | eggs |
| 1/3 cup | maple syrup |
| 1 tbsp | butter, mleted |
| 1 -2 cups | fresh or frozen blueberries |
Steps
- In a medium bowl mix the oats, almonds, baking powder, cinnamon, nutmeg and salt together.
- In another bowl whisk the milk, vanilla, eggs, maple syrup and butter until smooth (the butter may solidify a bit, but it will be fine when it bakes)
- Pour the wet ingredients over the oatmeal mixture, stir to combine
- Lightly grease a 9x9 baking dish ( can be a similar sized dish but needs to be at least a 9x9 but smaller than a 9x13)
- Toss blueberries over the bottom of the dish. Give the oatmeal mixture a final stir and pour over top of the blueberries.
- Cover the dish with plastic wrap adn refrigerate for 8-12 hours
- In the morning, preheat oven to 350 degrees. Uncover the baking dish and bake for 55-60 minutes until the mixture is set and the oats are tender but still slightly chewy.
- Serve with additional milk to stir into the oatmeal if desired
Note
Can switch out blueberries for other favorite fruits such as apples or bananas
