2 tbspolive oil, divided
1 1/2 tbspCajun seasoning
10 ozandouille sausage, sliced into rounds
1 lbchicken breast cut into 1" pieces
1onion, diced
2stalks celery, sliced
1green pepper, diced
3 clovesgarlic
1 candiced tomatoes
1/2 tspred pepper falkes
1/2 tspground black pepper
1 tspsalt
1/2 tsphot sauce
2 tspWorcestershire sauce
1 1/4 cupsuncooked white rice
2 1/2 cupschicken broth


  1. Heat 1 tablespoon of oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside.
  2. Add 1 tablespoon oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
  3. In the same pot, saute onion, bell pepper, celery and garlic until tender.
  4. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire saucer.
  5. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
  6. Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed and rice is tender.


Adjust spices to taste.
Can substitute out andouille sausage for different type
